Bardolino DOC vines were already cultivated in prehistoric times, but it was not named until the Middle Ages as Bardolino, a period in which the small town of the same name overlooking Lake Garda, was inhabited by feudal lords and noble families, also leaving their historical and cultural mark. A legend says the name of this wine could derive from Bardali, the name of King Axuleto's daughter and granddaughter of Manto (founder of Mantua). Thanks to the microclimate generated by Lake Garda, Bardolino DOC continued to be produced by the monks of the church of San Colombano until today. The Consortium for the Protection of Bardolino was established by the producers on December 23, 1969 following the recognition of the Bardolino wine DOC on May 28, 1968. The production area of this wine includes 16 municipalities between the Morainic hills and the eastern shore of Lake Garda. We find, therefore, variable soils, gravelly, rich in rocks and deep, and a climatic situation influenced by Lake Garda and Mount Baldo, which ensure a constant air flow and adequate temperatures. The harvesting of its grapes (Corvina Veronese, Marzemino and Rondinella) begins at the end of September and beginning of October. Then, at a controlled temperature, the must is fermented together with the skins for about 12 days. Once it becomes wine, it will age in steel barrels for about 6 months. From this process we obtain a light red wine with hints of violet, cherry and dried fruit. In the mouth it is full bodied and harmonic with hints of almond and cherry. We suggest to match it with first courses, white meat or fresh water fish. From Bardolino DOC there is a rose variant, Chiaretto di Bardolino DOC, and a superior variant, Bardolino Superiore DOCG.
