In the nineteenth century the production of Bardolino, of which we talk about in Bardolino DOC, began to be characterized by the presence of small quantities of wine with a prolonged aging and considered as "superior". The first testimonies are found in the writings of Solitro (Brescia) in 1897, but until 2001 it was not awarded by the Ministry the "Denominazione di Origine Controllata e Garantita" (DOCG), thus becoming the first red wine of Veneto to obtain such recognition. The production area of Bardolino Superiore DOCG red wine includes 16 municipalities between the Morainic hills and the eastern shore of Lake Garda. We find, therefore, variable soils, gravelly, rich in rocks and deep, and a climatic situation influenced by Lake Garda and Mount Baldo, which ensure a constant air flow and adequate temperatures. Its harvesting is late, and as opposed to Bardolino DOC and Chiaretto di Bardolino DOC, it starts at the end of october. After a temperature controlled fermentation on skins, it is aged in French oak tonneau for 24 months, giving the wine its particular scent of ripe fruit and enhancing the natural aromas of underbrush and cherry. After that, it stays another 6 months in bottle before being consumed. Our Bardolino Superiore DOCG "Riflesso", a fancy name because of its intense ruby red color and its violet reflections, is a full bodied and tannic wine therefore we suggest to match it with roasted meat, rose meat, game meat and aged cheese.
