Our Passito Veneto IGT is a sweet white wine. Its grapes, Garganega, Cortese and Trebbiano, meticulously harvested in September, undergo a long drying period in special well-ventilated rooms. The grapes dried in this way, after having reached 28°-30° Babo, are softly destemmed and left to macerate for about 36 hours. The must obtained is decanted and fermented in barriques of different woods. Its natural essence and the long aging of 24 months, allow this wine to take on a crystalline gold color, a scent of honey and ripe fruit. Its sweet, full and clean taste is in right harmony between sugar, alcohol and acidity. It is the meditation wine par excellence. We suggest to match it with spicy cheeses, honey, mustards and biscuits.
